Huitlacoche

$20 a pound

More commonly known in the U.S. as corn smut, huitlacoche develops when a pathogenic fungus causes smut disease on corn, resulting in tumors that are similar to mushrooms in appearance. This fungus has been enjoyed in Mexico dating back to the Aztecs. Its earthy, mushroom-like taste adds flavor to a number of dishes, including soups and quesadillas. It's tough to find sellers of fresh huitlacoche, also referred to as Mexican truffle, outside of Mexico.
